I'm trying to modernize and upgrade the AI vehicles on Haulin and I've started with the trucks since those are easier to find. What would be a good poly count to stay under? Right now I have Roach's 377 DC that I've brought down to around 93,000 polies but didnt know if I needed to take more off of it.

Interiors should be almost nonexistent. Way too many polies and not worth having it since you'll never see it. Compare it to some of the other vehicles.

The truck I'm replacing only has like 15k fml...xD and yeah I was thinking of deleting a majority of the interior details but leaving seats and a makeshift dash and then tinting the windows so it looks real without having problems.

You'd be better off taking a good picture from different angles and just making a real low poly interior and mapping the pictures to it. Then tint the windows so you can't really tell. Don't forget to make LOD models too!

yeah for sure, might just delete the whole interior except the basic dash shape and just copy the exterior body and flip it and then do some mapping, tbh I could just take pics of the interior in zmod and then map it to that lol, this def is gonna be an off and on lengthy project but I'm always gonna use Haulin' because my modding skills are best with it so I figured I might as well keep myself busy when I'm bored.

Render to texture in 3ds max would work well with what you want to do
